Medium tomatoes, seeded and chopped into 1-inch chunks 3
Red onion, diced ¼
Fresh basil, coarsely chopped 2 tablespoons
Garlic clove, minced 1
Capers 2 teaspoons
Olive oil 1 tablespoon
Balsamic vinegar 2 teaspoons
Kosher salt ½ teaspoon
Angel hair pasta 4 ounces
Grated Parmesan cheese 2 tablespoon

 

Directions

  1. Combine tomatoes, onion, basil, garlic, capers, oil, vinegar, and salt in a large bowl. Let marinate at room temperature for 30 minutes.
  2.  Cook pasta according to package directions, omitting fat and salt. Drain pasta, toss with tomato mixture, and top with Parmesan cheese.
