A Great American Favorite Made More Favorably; Healthy Meatloaf!

Have you ever had meatloaf so delicious that you didn’t even care to ask what was in it? Or, more importantly, how much of it is in it? Yes, we have all fallen victim to that great American delicacy before.

The good news is though; we have a recipe that allows you and the family to continue to enjoy this favorite tradition, while remaining health conscious. And, did we mention that this recipe doesn’t alter any of the reasons why we fell in love with this loaf of meat in the first place? It’s true, it is still cheap and good. We just added one more reason to love it, healthy!

Ingredients and Preparation

Ground beef, extra lean 1 pound
Tomato paste (4 ounces) ½ cup
Onion, chopped ¼ cup
Green peppers ¼ cup
Red peppers ¼ cup
Tomatoes, fresh, blanched, chopped 1 cup
Mustard, low sodium ½ teaspoon
Ground black pepper ¼ teaspoon
Hot pepper, chopped ½ teaspoon
Garlic, chopped 2 cloves
Scallion, chopped 2 stalks
Ginger, ground ½ teaspoon
Nutmeg, ground 1/8 teaspoon
Orange rind, grated 1 teaspoon
Thyme, crushed ½ teaspoon
Bread crumbs, finely grated ¼ cup

 

Directions

  1. Mix all ingredients together.
  2. Place in 1-pound loaf pan (preferably a pan with a drip rack) and bake covered at 350°F for 50 minutes.
  3. Uncover pan and continue baking for 12 minutes.
