Figs are sweet in flavor and high in potassium, calcium, iron and fiber; which, makes them a great healthy alternative for desserts.
We love this simple recipe from the American Diabetes Association for Fresh Grilled Figs:
Serves: 4; Serving size: 3 fig halves
Ingredients
6 medium fresh figs
1 tsp aged balsamic vinegar
1 tsp Acacia or orange blossom honey
2 tsp thinly sliced fresh mint
Preparation
- Lightly coat a grill or grill pan with natural cooking spray.
- Preheat grill or grill pan over medium high heat.
- Remove stems from the figs and slice in half vertically.
- Brush the cut surface of the figs with vinegar.
- Grill, cut side down, for about 3 minutes or until charred.
- Drizzle with honey and top with mint.
